- 4 large eggs
- 125 g caster sugar
- 100g of flour
- 1 C. coffee baking powder
- 30g butter + 20g for the mold
- 1 jar of jelly or raspberry jam.
Melt the butter slowly. Preheat the oven to 230 ° C (tea 7-8).
Separate the egg whites from the yolks. Beat them in very firm snow.
Work the yolks and sugar until the mixture whitens.
Stir in 30 g flour, melted butter, yeast and 1/3 of the whites.
Continue to gently incorporate the ingredients, ending with the whites in the snow.
Line the baking sheet with a sheet of parchment paper and butter it. Pour the dough in the center about 1.5 cm thick. Bake 8 to 10 minutes.
When the dough resists finger pressure, take it out of the oven.
On the table, roll together paper and biscuit. Let cool, unroll the dough by removing the paper. Spread it with jam. Wrap it tightly.
Cut the ends and leave to rest until dessert.
